Favorite Frittata muffins

• 12 Hansen’s Eggs

• 1/4 cup Hiland Heavy Whipped Cream

• 1 teaspoon Daddy Hinkles original spices

• 1 tablespoon chopped Scissortail Farms basil

• 1/4 cup grated mozzarella cheese

1/2 cup chopped Scissortail Farms Spinach

1/2 cup chopped JM mushrooms

1/4 cup roasted red peppers in glass, chopped

• 1/4 cup chopped Bar-S Bacon (optional)

Preheat oven to 350 F. Line a 12-count muffin tin with muffin liners and spray with non-stick spray. A silicone muffin pan also works well.

Combine eggs, cream and spices, beat until the eggs are completely beaten. Whisk in the mozzarella cheese. Fill the mixture among the 12 cups, filling about ½ to ¾ full. You may have enough extra dough to make a few extra muffins. Top each with toppings of spinach, mushrooms, red peppers and bacon (if desired). You can customize these to each person’s taste by using your favorite vegetables, cheeses and meats.

Bake 16 to 18 minutes, shaking the center to see if the egg is set. Allow to cool for a few minutes before removing them from the cups. You can eat these hot or cool, then wrap them individually and store them in the refrigerator or freezer.

Crispy coconut chickens

• 1 Hansen’s Egg

• 1 tbsp Suan’s Scotch Bonnet Pepper Jelly

• 1 cup coconut in flakes

1/2 cup Shawnee Mills All-Purpose Mel

• 1/2 teaspoon salt

• 1/4 teaspoon black pepper

• 1/4 teaspoon garlic powder

• 1 1/2 pounds boneless chicken tenderloin without skin

1/3 cup Braum butter, melted

Preheat the oven to 400 F. Beat eggs and pepper jelly together in a low dish. In another low dish, combine coconut, flour, salt, pepper and garlic powder.

Dip chicken strips first in egg and then in coconut, line each side well.

Place the chicken on a baking sheet. Drizzle with butter (this gives a nice color to the chicken). Bake for 25 minutes or until browned and well done. Turn the chicken halfway through the cooking time.

• 1 jar of Lovera’s Old World Pizza Sauce

• 4 slices Bar-S Bacon, boiled and crumbled

• 1/4 pound Greer’s Ranch House Sausage, cooked and drained of fat

• 1 Mountain View Meat Company smoked sausage link, boiled and thoroughly heated

1/2 cup grated mozzarella cheese

1/3 cup sliced ​​JM mushrooms

BBQ chicken

• 1/3 cup Sweet Spirit Foods BBQ Sauce

• 1 chicken breast, deep fried and sliced

• 1 Mountain View Meat Company Hot Link, cooked and thoroughly heated

• 4 slices Bar-S Bacon, boiled and crumbled

1/2 cup grated cheddar cheese

• 1/4 cup chopped red onion

Prepare Shawnee Mills pizza crust according to package directions. Form the dough into three dough balls. Shape each dough ball into a mini pizza on a large baking sheet, and press to shape the edges into a crust. Preheat oven to 400 F.

• 1 pack Stone Sisters Organics Happie Pizza Crust

• 1/4 cup cherry tomatoes, halved

• 1/4 cup chopped red onion

• 2 cups grated Lovera’s Caciocavera cheese

• 2 tablespoons chopped Scissortail Farms Oregano

• 2 tablespoons chopped Scissortail Farms Basil

Place the ingredients over the pizza crust. Bake at 400 F in a regular oven or 375 F in a convection oven for 10 to 12 minutes, or until crisp.
