Modern Markets’ new winter menu introduces seasonal comfort food in a fresh way

The Fast Casual Restaurant Shakes Up Menu with four new nutritious and sustainable offerings, including salad, pizza and a fresh taste of lemonade

January 04, 2022 // Franchising.com // Denver – Modern Market Eatery, the healthy fast-casual restaurant brand known for its cereal bowls, marketplace salads and seasonal cuisine, recently launched its new winter menu. This year’s latest additions include a pizza, two hearty salads and a vegetable-inspired lemonade.

Influenced by the amount of winter vegetables, the new Brussels & Bacon Pizza as well as the Winter Harvest Salad celebrate the season, while remaining true to Modern Markets’ sustainable roots. Bruxelles & Bacon The pizza combines the freshly tossed dough with creamy white sauce, which is then topped with nitrate-free bacon and lightly charred Brussels sprouts and finished with a light balsamic drizzle. The winter salad also has a balsamic reduction that compliments charred Brussels sprouts, a typical winter vegetable. Along with herb-fried chicken, sweet potatoes and pomegranate seeds, this salad offers the perfect blend of solid, salty and sweet seasonal flavors.

With a nourishing nod to the traditional French Niçoise salad, the new Ahi Tuna Niçoise Modern Markets showcases the recent protein addition, line-caught ahi-tuna. Modern Markets culinary creative chef Josh Chesterson, originally introduced to the 2021 summer menu, conceptualized a way to incorporate the popular protein into a winter season dish. The Ahi Tuna offers guests a modern spin on a traditional salad enhanced with seasonal vegetables, including crispy green beans, roasted cherry tomatoes and roasted fingerling potatoes.

Modern Market rounds off the winter menu with its latest vegetable-inspired lemonade addition: Carrot Ginger Lemonade. The drink includes freshly squeezed carrots and is infused with hand-juiced ginger and lemon, making a gesture to Modern Markets’ commitment to be a health-conscious option for consumers.

  • Brussels & Bacon Pizza – Brussels sprouts, nitrate-free bacon, roasted onions, whole milk mozzarella, blue cheese, balsamic glaze, white cheddar sauce [$10.95]
  • Winter autumn salad Romaine, herb-marinated roasted chicken, roasted Brussels sprouts, sweet potatoes, green apples, candied walnuts, cage-free eggs, pomegranate seeds, balsamic glaze, ranch dressing [$12.95]
  • Ahi Tun Niçoise – Spring mix, line-caught ahi-tuna, green beans, roasted cherry tomatoes, cage-free eggs, kalamata olives, roasted fingerling potatoes, sesame seeds, citrus champagne vinaigrette [$13.95]
  • Carrot ginger lemonade – Hand-juiced carrots, hand-juiced ginger, lemons, water and sugar [$2.50]
