A 25-year-old marketing manager who earned a net worth of more than $ 450,000 in five years has shared the three budget meals she swears by, and none of them cost over $ 5.

Queenie Tan from Sydney said her financial success gradually accumulated after she started researching and investing when she was 19 years old.

Queenie now has a diverse financial portfolio after buying her first property in 2019 worth $ 500,000 with a security deposit of $ 100,000.

In one of her latest YouTube clips, Queenie revealed the three cheap meals she makes for herself and her boyfriend, Pablo, to save money, and the grocery shopping tricks she uses on a weekly basis.

Queenie said the meals are all vegetarian since she’s pescatarian, but you can easily add some meat without increasing the cost too significantly.

MARINED VEGETABLE PASTA SALAD

The first dish that the 25-year-old put together is a marinated vegetable pasta salad, which Queenie explained is inspired by a recipe she found at RecipeTin Eats.

To recreate the dish at home, use some pantry staples like extra virgin olive oil, dried pasta, salt and pepper and garlic, as well as some vegetables including peppers, red onions, eggplant, zucchini, mushrooms and asparagus.

You will also want your fingers in some feta and lemon juice for the marinade.

For eight servings, this recipe costs $ 19.58 – or just $ 2.45 per serving.

Queenie said she loves making this dish so she has to eat lunch all week.

METHOD

Preheat your oven to 240 degrees Celsius and cut all your vegetables into cubes and place them in a bowl.

2. Cut your onion into quarters and peel the layers. Place your asparagus and cherry tomatoes in a separate bowl for the rest of the vegetables.

3. Crush the garlic and add it to the vegetable mixture. Add a teaspoon of salt, olive oil and pepper to the vegetables and mix.

4. Lay them out on a baking sheet and put them in the oven for 20 minutes.

5. While it is boiling, boil your pasta in boiling water. To prevent the water from boiling over, Queenie recommends that you place a wooden spoon on top of the frying pan, as this destabilizes the bubbles and causes the water to retreat.

6.Make your marinade at the same time by cutting a lemon in half and squeezing the juice out. Add garlic, extra virgin olive oil and salt and pepper and mix in a bowl. Cut your feta into cubes and add.

7. After 20 minutes, add the asparagus and tomatoes to the tray and put back in the oven for another five minutes

8. Take the vegetables out of the oven and combine with the pasta and marinade, stirring well. Serve hot or cold.

METHOD

Discard the ends of the green onion and chop them into small pieces.

2. Chop the shiitake mushrooms into small pieces and place them in a bowl.

4. Peel and crush the garlic and put it in a bowl.

METHOD

“Buy in cheaper supermarkets to save money,” Queenie said.

‘We spend an average of $ 450 a month on groceries for two people, so that’s only $ 60 a week per person.

‘We make most of our meals at home, except once a week where we like to go out to a restaurant or order takeaway.’

Queenie explained that she saves money on groceries by buying most of her items from Aldi and only a few purchases from Woolworths.

Queenie also uses $ 500 gift cards through her insurance provider, saving her about $ 15 a month.

“We always make a shopping list of recipes that we want to make and write all the ingredients we need on AnyList,” she said.

Then Pablo and I went shopping and I went to Aldi’s and he went to Woolworths. I will try to buy as many things as possible and Pablo will buy what I can not get.

‘We communicate with each other throughout the store to find out where it’s cheapest. It sounds like it takes time, but it actually goes faster as we are two, and it always saves us money.
