(13.5 ounce can) cannellini beans, rinsed

  1. Heat oil in a large saucepan over medium heat. Add scallions, garlic and jalapeño. Season with salt. Cook, stirring occasionally, until soft, 4 to 6 minutes. Add green chillies and cook, stirring occasionally, until thicker, 3 to 5 minutes. Add cumin, oregano and paprika. Boil, stirring, 30 seconds.
  2. Add chicken and season with salt. Cook, stirring occasionally, until chicken is cooked through, 6 to 8 minutes. Add broth and beans and bring to a boil. Reduce to a simmer and cook, stirring occasionally, until thickened, 30 to 35 minutes. Serve topped with scallion greens and desired toppings.
